King Prawn Fajitas

A taste of Mexico! Serves 2.

King Prawn Fajitas



1 pack Lyons King Prawns
1 heaped tablespoon of fajita seasoning mix
½ medium sized onion, thinly sliced
½ green and ½ red pepper, each cut in half & thinly sliced
1 tablespoon olive or sunflower oil

To serve: 1 pack flour tortillas, salsa, soured cream & guacamole.


1. Heat the oil in a heavy based frying pan until very hot.

2. Add the sliced onion and peppers and pan fry until soft and lightly brown in colour.

3. Add the fajita seasoning mix and cook, stirring well for 1-2 minutes.

4. Add the King Prawns, and gently stir the mixture together. Heat for 1-2 minutes only.

5. Spoon the mixture into warm tortillas. Add a dollop of salsa, soured cream &
guacamole and a sprinkle of fresh coriander. Wrap up & enjoy!
