Easy Peasy Paella

The Spanish classic. Serves 2.

Easy Peasy Paella



1 pack Lyons Seafood Selection
250g easy-cook white rice
100g frozen peas
½ teaspoon turmeric
1 vegetable or fish stock cube
1 onion, peeled and chopped
1 red pepper, deseeded and diced


1. Place the rice in a large pan with the turmeric. Crumble in the stock cube and add 900ml water. Bring to the boil, stirring.

2. Add the onion and pepper. Cover the pan and cook for 10 minutes until most of the liquid has been absorbed.

3. Toss in the frozen peas, stir well and cook covered for a further 10 minutes.

4. Remove lid, add the Seafood Selection and stir well.

5. Heat through for 5 minutes and serve.
